Sonntag: One leave different taste (E)

I’m looking at freshly plucked leaves. Now comes the choice—what will they become by evening? White? Black? Or green? And in which style will I craft them?

In this tasting, I want to bring you as close as possible to that very moment of decision—the creative instant where the future opens. Your choices will shape the flavor of what’s to come.

The session will unfold as a set of direct contrasts: teas from a single harvest, placed side by side. With whites, we’ll explore how different withering times transform the taste—short versus long. With greens, we’ll compare how stopping oxidation by pan-firing differs from steaming. And with blacks, we’ll taste the impact of shorter and longer oxidation.

One harvest—one garden—six distinct teas. Each crafted by my own hands from the organic Sičaj Tea Garden in Georgia, all picked and processed on July 19th.

Be prepared: I’ll also be guiding you through the biochemistry and the hidden processes behind these methods, revealing how each choice leaves its mark in the cup.
