Pu-erh tea is intimately bound to the notion of time. While some teas seem to freeze time like a photograph, pu-erh plays with it like a movie. Of course, one would first thinks of the time of maturation—how pu-erh evolves over the years. Yet it is on a much shorter scale, in the moment of tasting, that this notion takes on its deepest meaning. The tasting of pu-erh is, in fact, a profoundly temporal experience, a narration, a dramaturgy. And yet many overlook this dimension, which is truly the greatest richness of this family of teas. For to perceive it, one must grant the tea the time it asks for, and be attentive. I therefore invite you to a time with a particularly precious tea, to fully live what it has to tell you, and study the unique relationship between puerh tea and time…
